EMMENTALER GROTTA KALTBACH - stagionato 30 mesi
Emmentaler Kaltbach took its name from Emmental' Valley, where Emme's river flows. Its long seasoning time guarantes to this raw milk cheese the total absence of lactosium, and a peculiar flavour of hazelnut. The holes are also tasty: they contain the so-called "lacrime di gioia", which characterise the special quality of this cheese.
Only 4-6 of the dairies that produce it have all the requirements to be able to deliver their cheeses for maturing in the Kaltbach' cave.
A natural beauty: water and ice created the KALTBACH sandstone cave more than 22 million years ago. By a lucky coincidence, cheesemakers in the area discovered, in 1953, that the special conditions in the cave allow the cheese to mature in a unique way.
